Jumelage: This is a brilliant wine to be pair with beef, volaille, la nourriture épicée ou de l'agneau. Ce sera un bon compagnon à midi, à boire avec de la viande rôtie, a classic meatloaf or pasta and vegetables. Servir à 16-18 ° C (60-68°F).

Couleur: Garage Carignan is a dark ruby red wine.
Arômes: Elegant and layered on the nose, with concentrated aromas of red & fruits noirs tels que framboise mûre, prune, cassis, cerise noire et de figue.
Bouche: The taste is velvety, corsé, dense, un arrière-goût très fruité et persistant en raison du contenu tannique uts un astringent bouche-sensation agréable.

Carignan Lot # 34 - 2011 – The Maule – Caliboro (Señora Patricia)
This wine was grown by small farmers in the Maule Valley, farmed by hand and horse plowing with traditional methods of dry-farming on 70+ year old vines with a few vines of Grenache & Mourvèdre in the field-blend. It was fermented naturally in open-top. Caps were punched down by hand and pressing was strictly manual. The wine was barreled in neutral oak over two winters and then bottled in recycled bottles. This wine is a tribute to the resilience of the ploughmen farmers of the Maule, its having been harvested on the heels of Chile’s 2010 earthquake. As this was the 34e wine we have produced since 2001 it is thus labeled Lot # 34. This wine was made with open-top fermenters. Caps were punched down by hand. Pressing was strictly manual. The wine was barreled in neutral oak over two winters.
