The people linked to the motto of Viña Pargua are Jean-Pascal Lacaze, a French winemaker who is also in charge of the emblematic Chilean wine Domus Aurea; Isabelle and Ricardo Peña owners of Domus Aurea; and Francisco Santa Cruz, a Chilean environmentalist dedicated to conservation and to developing projects in harmony with nature.
Viña Pargua is a 23 hectares vineyard nestled at Paine, in the heart of the Maipo Valley. A pioneer in organic grape production in Chile, it was planted in the year 2000. The people behind Viña Pargua are Jean-Pascal Lacaze, a French winemaker who is also in charge of the emblematic Chilean wine Domus Aurea; the Peña family, owner of Domus Aurea; and Francisco Santa Cruz, a Chilean environmentalist who has dedicated his life to environmental conservation and to developing projects in harmony with nature.
Harvest season at Viña Pargua changes every year, meanwhile, is characterised by ups and drops in temperature in comparison to the condition of the previous year. The occurrence of some spring freezes compounded by a cooler summer produces a delay in ripening with a slow phenolic ripening: wines especially apt for storage, or on the contrary, due to climate change an increase of temperature advance ripening. Vinification is always traditional, as with all Pargua vintages, with a slow and long extraction. After 32 days macerating, wines were racked to their own barrels, according to each lots personality in order to keep the tipicity of the Viña Pargua sense of place. Soft fining with egg whites and very light filtration ended the process.
